Zucchini & Yellow Squash Rice Pilaf
This easy and tasty side dish will pair well with any entrée, it includes tender carrots, zucchini, and yellow squash over creamy rice.

Yield/Total Servings: 8 servings
Ingredients
- 1 tablespoon butter
- 1 cup sliced carrots
- 1⁄2 cup chopped onions
- 2 cups broth low-sodium
chicken or veggie - 2/3 cup long grain rice
- 1 cup sliced yellow squash
- 1 cup sliced zucchini
- Fresh herbs of your choice (optional) basil, parsley,
oregano, thyme, dill, etc. - salt and pepper to taste
Directions
- Melt butter in a large saucepan over medium-high heat. Add carrots and onions, cook until tender, about 5 minutes.
- Stir in broth, rice, salt and pepper and bring to a boil. Reduce the heat to simmer, and simmer covered for 13 minutes.
- Uncover and stir to lift any rice that may be sticking to the bottom of the pan. Mix in yellow squash and zucchini.
- Re-cover and simmer an additional 5-10 minutes, or until the rice is tender.
- Garnish with fresh herbs, salt, and pepper.
